Turkish Delight Pavlova Parfait

Strawberries 2 cups
Caster sugar 3 tbsp
Lemon juice 2 tbsp
Rose water 2 tbsp
Strawberry Cream Meringue Icecream 1/2 tub
Mini Meringues 1/2 cup
Pistachios, roughly chopped 1/4 cup
Turkish delight, chopped in small pieces 1/2 cup


  1. Make strawberry coulis by placing 1 ½ cups of sliced strawberries, caster sugar, lemon juice and rose water in a saucepan over medium-high heat. Bring to a boil, then reduce to a simmer. Simmer for 10 minutes, stirring occasionally. Take off heat and lightly mash with a fork, then leave to cool for 10 minutes.
  2. Divide strawberry coulis between four glasses. Top with a generous scoop or two of strawberry cream meringue Icecream. Top with remaining sliced strawberries, mini meringues, chopped pistachios and Turkish delight. Serve immediately.
