Single Serve Apricot Crumble

Apricots, pitted and quartered 2
Brown sugar 1 tbsp
Corn starch 1/2 tsp
Rolled oats 3 tbsp
Flour 1 tbsp
Salt 1 pinch
Coconut oil, melted 1 tbsp
Maple syrup 1 tbsp
To top:

• Motueka Creamery Vanilla Ice Cream • Dried apricot pieces • Walnut pieces


  1. Preheat oven 180˚C and grease a ramekin or mini cast iron pan.
  2. In a small bowl, toss apricot pieces with brown sugar and corn starch. Pour into ramekin/ pan.
  3. In another bowl, mix together rolled oats, flour, coconut oil and maple syrup. Sprinkle crumble mixture on top of apricots
  4. Bake in oven for 25 minutes or until golden brown on top.
  5. Serve topped with vanilla Icecream, dried apricot and walnut pieces.
