Large Eggs 4
All purpose flour 2/3 Cups
Milk 2/3 Cups
Granulated sugar 2 Tablespoons
Vanilla essence 1 Teaspoon
Lemon Zest of 1 Lemon
Salt 1/4 Salt
To top:

Dust with icing sugar, top with lemon curd and a BIG scoop of Motueka Creamery Lemon Cheesecake ice cream.


1. Preheat oven to 200 fan bake.

2. Place 2 tablespoons of butter & 2 tablespoons of oil into your skillet & place in the oven to melt.

3. While this is melting place all following ingredients into your food processor and blend until smooth.

4. Once butter / oil has melted remove skillet from oven & pour in your pancake mix, return to oven and bake for 15-20 minutes until pancake if fluffy & golden!
